Deepa's Okra |  Vegetable Day

Makes 1 serving - uses 6 oz of your daily vegetable allowance

Ingredients
  • 6 oz okra
  • 1 tsp mustard seeds (whole)
  • ½ tsp asafetida
    • This is an Indian spice you may buy in an Indian grocery. Strong aroma disappears when cooked
  • ¼ tsp turmeric
  • red chili powder, to taste
    • This is an Indian spice you may buy in an Indian grocery
  • salt, to taste
  • PAM or other zero-calorie cooking spray
Directions
  • cut off top and tail of okra and slice into circles approx. 1/8 - 1/4 inch thick
    • note, thinner slices will be crispier
  • spray PAM on a saute pan or small wok (something with sides)
  • on medium heat, add mustard seeds and asafetida
  • when mixture begins to “crackle” add okra
  • cook for 5 mins, stirring often
  • add turmeric, red chili powder and salt, to taste
  • stir and continue cooking until desired crispiness
  • enjoy!
