Cucumber Salad (Gilda) |  Vegetable Day

  • 1 - 2 cucumbers, peeled and thinly sliced on mandolin or food processor
  • 2-3 scallions, chopped
  • ¼ c. lemon juice
  • 2 packets Splenda (or more to taste)
  • ½ tsp. salt
  • combine: ¼ c. lemon juice, 2 packets Splenda (or more to taste),½ tsp. salt
  • pour over cucumbers and scallions and marinate for several hours before serving
