Butternut Squash Soup       |  Vegetable Day
    
	Try this creamy, delicious butternut squash soup to warm you up on a cold winter's day. 
	
    
    Ingredients
	 
    
	     
							- 2  ½ lbs butternut squash
 
                            - 2-3  carrots
 
                            - 1-2  celery stalks 
 
                            - 1  onion
 
                            - 2  apples
 
                            - 5-7  cups of vegetable broth
 
                            - 1  ½ tsp curry powder
 
                            - Pinch  of nutmeg
 
                            - Pinch  of ginger
 
						
  
    Directions
     
							- Mix  everything in a large pot.
 
                            - Bring  to the boil and then simmer for 40 minutes.
 
                            - Puree  with a stick blender or in a blender.
