Pasta Primavera |  Vegetable Day

Try this “everything-but-the-kitchen-sink” vegetable pasta dish and your taste buds will thank you. Sauté hearts of palm pasta, tomato sauce, spinach, mushrooms, broccoli, cauliflower and whatever vegetables you have in your refrigerator. Makes a tasty meal for you and the whole family!

Makes 2 servings. 12 oz of daily vegetable allowance.

  • 14 oz can hearts of palm pasta (pictured: Palmini linguini http://eatpalmini.com/)
  • 8 oz legal tomato sauce
  • 6 oz fresh spinach
  • 1/4 red pepper, diced
  • 1/2 carrot, diced
  • 1/4 onion, diced
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • Braggs Organic Sprinkle or other seasonings, to taste
  • Zero calorie spray
  • Spray a medium sauté pan with cooking spray and heat over medium flame.
  • Sauté spinach, red pepper, carrot, onion, garlic and/or other vegetables of your choice.
  • Once the vegetables softened a little, gently fold-in the hearts of pal pasta and tomato sauce.
  • Season with all-purpose seasoning, salt and pepper, to taste.
  • Enjoy!
