Homemade Beet Salad (Debbie) |  Vegetable Day

Makes 2 servings - uses 8 oz of your daily vegetable allowance

  • 2 cooked beets, diced
  • 1 small red onion, minced
  • salt
  • pepper
  • juice of 1 lemon
  • put diced beets and onion in bowl
  • add lime juice, salt and pepper
  • toss, taste and add more lime, salt, pepper to taste
  • enjoy!
