Homemade Beet Salad (Debbie) |  Vegetable Day
    
	Makes 2 servings - uses 8 oz of your daily vegetable allowance
	
    
    Ingredients
	 
    
	     
						    - 2 cooked beets, diced 
- 1 small red onion, minced
- salt
- pepper
- juice of 1 lemon
 
    Directions
      
				        - put diced beets and onion in       bowl
- add lime juice, salt and pepper
- toss, taste and add more lime,       salt, pepper to taste
