Barbara's Whipped Cream |  Milk Day

Makes 2 servings - each serving uses 2 oz of your daily milk allowance

  • 3 oz whole milk
  • 2 TBSP plain whole milk yogurt (1 oz)
  • 1/2 tsp xanthan gum
  • 2 - 3 packets Truvia
  • 1 tsp pure vanilla extract (optional)
  • put whisk in freezer for 15 minutes
    • note, Barbara whisked by hand, but you may use an electric mixer
  • make sure milk and yogurt are refrigerated until you are ready to begin - cold ingredients whip better
  • in a medium bowl, whisk milk briskly until it becomes a thick froth (3-5 mins)
  • add the yogurt and continue to whisk briskly
  • add xanthan gum and whisk for 1 minute
  • let stand for 2 minutes
  • whisk briskly again until consistency allows you to create "peaks"
    • note, the more xanthan you use, the thicker/more gelatinous it will get. Ok to use up to 1 tsp for this recipe.
  • add sweetener, to taste
  • add vanilla, if desired. gives it a “marshmallow” flavor
  • use it as a topping on legal hot chocolate, chocolate pudding, jello, an ice cream sundae or on its own with a spoon!
