Jill's Carrots and Cabbage |  Vegetable Day

Makes 4 servings - each serving uses 12 oz of your daily vegetable allowance

  • 1 lb carrots, chopped
  • 1 head of cabbage (white or green), sliced
  • 1 onion, chopped
  • 1 shallot, chopped
  • salt
  • pepper
  • PAM Olive Oil or other zero-calorie cooking spray
  • spray a sauté pan with PAM
  • put chopped onions and shallots and sauté for 5 minutes
  • add carrots to sauté until they soften, stirring frequently
  • add cabbage to sauté until it all softens
  • season with salt and pepper to taste
  • note, this tastes even better the next day
  • enjoy!!
