Mary's Tropical Delight |  Vegetable Day

Makes 2 servings - uses 12 oz of your daily vegetable allowance and 1 serving of fruit

Ingredients
  • 1 small red onion, chopped
  • 1/2 red bell pepper, sliced
  • 5 oz cabbage, sliced
  • 1 zucchini, sliced
  • 1 small banana, sliced
  • 1/4 cup shredded coconut
  • 1 package Miracle Rice
    • may use Miracle Noodles cut into small pieces
  • 2 TBSP yellow Indian curry powder
  • 1 tsp garlic salt
  • 1/2 cup water
  • salt, to taste
  • pepper, to taste
  • 1 cup pineapple and mango, diced
  • PAM or other zero calorie cooking spray
Directions
  • spray skillet with PAM
  • "fry" onion, bell pepper and cabbage until slightly soft
  • stir in curry and garlic salt and fry for 2 more minutes
  • stir in rest of ingredients, except pineapple and mango
  • simmer uncovered until zucchini becomes slightly soft (approximately 5 minutes)
    • add more water, as needed
  • scatter with pineapple and mango before serving
  • enjoy!!
