Zucchini Boats |  Vegetable Day

Makes 2 servings - uses approximately 8 oz. of your daily vegetable allowance

  • 1 zucchini
  • 1 tomato
  • garlic
  • onion
  • basil
  • oregano
  • salt
  • pepper
  • preheat oven to 350⁰ (375⁰ if you prefer extra crispy)
  • cut the ends off the zucchini
  • slice zucchini in half lengthwise and scoop out most of the flesh making “zucchini boats”
  • dice the zucchini flesh (not the “boat”) and tomatoes
  • dice in the remaining ingredients (quantities to taste)
  • note, you may add in any other favorite vegetables you like such as mushrooms, peppers, etc.
  • apply a thin layer of the diced vegetable mixture into the“zucchini boats”
  • bake for 30 minutes
  • note, you can pick up the “zucchini boats” and eat them like a slice of pizza (makes the house smell like pizza too!)
