10 Minute Zucchini Noodles |  Vegetable Day

Makes 1 serving - uses 12 oz of your daily vegetable allowance

  • 1 medium zucchini, spiralized
  • 10 cherry tomatoes, halved
  • 6 fresh basil leaves, chopped
  • 1 garlic clove, chopped
  • salt
  • pepper
  • PAM or other zero calorie cooking spray
  • spray a pan with PAM
  • sauté garlic
  • add cherry tomatoes to sauté for a couple of minutes
  • add zucchini noodles and basil to the sauté
  • add salt and pepper, to taste
  • enjoy!
