Non-Stuffed Vegetarian Cabbage |  Vegetable Day

Makes 4 servings - uses 12 oz of your daily vegetable allowance

  • 1 green cabbage
  • 1 head of cauliflower
  • 1 large sweet onion
  • 14 oz can of sauerkraut (no vinegar)
  • Splenda or other zero-calorie sweetener
  • salt
  • parsley
  • cut off outer cabbage leaves and cut cabbage in chunks
  • cut off base of cauliflower and cut cauliflower in chunks
  • cut onion in chunks
  • put cabbage, cauliflower and onion in pot
  • cover with water, sprinkle with salt and boil until soft
  • drain well
  • return mixture to pot
  • add sauerkraut (do not drain)
  • cook on very low heat for 15 - 20 minutes
  • season to taste with sweetener, salt, parsley
  • enjoy!
