Mushroom Bacon |  Vegetable Day

Makes 2 servings - uses 4 oz of your daily vegetable allowance)

  • ½ lb shitake mushrooms
  • Bragg's Liquid Aminos
  • PAM or other zero-calorie cooking spray
  • slice mushrooms thinly; use stems if not too “woody”
  • marinate mushrooms in Bragg's Liquid Aminos for 20 minutes
  • spray a cookie sheet with PAM
  • place the mushrooms on the cookie sheet
  • spray lightly again
  • for crispy - bake at 250⁰ for 1 ½ to 2 hours (watch carefully so they do not burn)
  • for crispy but chewy - bake at 400⁰ for 10 minutes (watch carefully so they do not burn)
  • let cool and enjoy
