Refreshing Mango Toss |  Vegetable Day

Makes 2 servings - uses 1 of your daily fruit and 4 oz of your daily vegetable allowance

Ingredients
  • 2 mangos, cubed
  • ½ cup cherry tomatoes, halved
  • 2 TBSP minced red onion
  • 2 TBSP fresh lime juice
  • ½ TSP ground cumin
  • salt
  • pepper
Directions
  • combine ingredients in medium bowl
  • gently toss
  • season with salt and pepper to taste
