Helen's Salad |  Vegetable Day
    
	Vegetable & Fruit Day This recipe is for a whole salad and is not a single serving. You will need to portion out the vegetables.
	
    
    Ingredients
	 
    
	     
                      - 1 red pepper (diced)
- 1 yellow pepper (diced)
- 1 orange pepper (diced)
- 1/2 red onion (diced)
- bunch of cilantro (chopped)
- bunch of parsley (chopped)
- 1 large cucumber (cut into small       pieces)
- 5 avocados (cut into medium-sized       chunks)
- salt and pepper to taste
 
    Directions
      
                      - mix it all up
- you can also add lemon or lime to add       some citrus flavour
