Homemade Gel Dessert |  Any Day, Any Time

Makes 4 servings - unlimited

  • 1 packet unflavored, unsweetened gelatin (we used KoJel)
  • 16 oz water (8 oz cold, 8 oz boiling)
  • 5 packets Nectresse or other zero-calorie natural sweetener
    • note: 1 Nectresse = 2 tsp sugar, so adjust other brands accordingly
  • 2 tsp fruit-flavored baking extract (we used raspberry)
    • make sure ingredients do not include corn syrup
  • food coloring (optional)
  • pour cold water into a mixing bowl
  • slowly pour the gelatin into the water, mixing well
  • add sweetener, flavor and food coloring, mixing well
  • adjust sweetener, flavor and color to personal taste
  • add boiling water, mixing well
  • pour into bowl or gelatin mold(s)
  • refrigerate at least 40 minutes until it sets
