Jicama “fries”         |  Vegetable Day  
    
	These Healthy Jicama Fries make a fantastic alternative to traditional French fries. They are easy to prepare and they satisfy the need for a salty snack.  Makes 4 servings – uses 4 oz of your daily vegetable allowance
	
    
    Ingredients
	 
    
	     
							1  large jicama  
                            2  tsp garlic powder 
                            2  tsp chili powder 
                            2  tsp paprika powder 
                            Salt  & pepper, to taste 
                            Avocado  oil spray or any other zero calorie cooking spray 
						   
    Directions
     
							Cut  Jicama into strips you may use a mandolin to make thin slices and then cut thin  strips with a knife. 
                            Place  jicama strips in a bowl of water and microwaved for 6 min.  
                            Drain  and toss in a bowl with salt, pepper, garlic powder, chili powder and paprika.  
                            Spray  avocado oil on parchment lined cookie sheet. 
                            Spread  the “fries” on the trays, trying not to crowd them. 
                            Baked  at 425˚  for 30 min in a convection oven, bake 15 minutes longer in a regular oven or  until they are browning.
