Holiday Pumpkin Pudding |  Vegetable Day

Makes 2 servings - uses 1.5 cup of your daily fruit allowance

Ingredients
  • 2 honey crisp apples
  • 1 banana
  • Pam
  • 1 teaspoon Lakanto sweetener
  • salt
  • cinnamon
  • pumpkin pie spice
  • 2 to 3 tablespoons of pumpkin purée
Directions
  • spray apples & banana with cooking spray
  • add a pinch of salt, cinnamon, pumpkin pie spice and a teaspoon of Lakanto sweetener
  • cook until fruit is soft
  • cool in the fridge
  • add 2 to 3 tablespoons of pumpkin purée
  • put into food processor or blender and blend
  • enjoy!
