Aundrea's Mock Home Fries | Vegetable Day
Makes 1 serving - uses 1 cup of your daily fruit allowance and 2 oz of your daily vegetable allowance
Ingredients
- 1 yellow plantain, diced
- 1/4 cup onion, diced
- 1/4 cup green pepper, diced
- salt
- pepper
- PAM butter, PAM olive oil or other zero-calorie cooking spray
- 2-3 TBSP water
Directions
- combine diced ingredients in a bowl
- season with salt and pepper, to taste
- spray with PAM
- place in sauté pan with water
- cover and cook for 10-12 minutes, stirring frequently, until plantain softens
- continue to cook until they “crisp up” a little
- enjoy!
