Aundrea's Mock Home Fries |  Vegetable Day

Makes 1 serving - uses 1 cup of your daily fruit allowance and 2 oz of your daily vegetable allowance

  • 1 yellow plantain, diced
  • 1/4 cup onion, diced
  • 1/4 cup green pepper, diced
  • salt
  • pepper
  • PAM butter, PAM olive oil or other zero-calorie cooking spray
  • 2-3 TBSP water
  • combine diced ingredients in a bowl
  • season with salt and pepper, to taste
  • spray with PAM
  • place in sauté pan with water
  • cover and cook for 10-12 minutes, stirring frequently, until plantain softens
  • continue to cook until they “crisp up” a little
  • enjoy!
