Barbara's Simple Baked Apple |  Vegetable Day

Makes 2 servings - each serving uses 1 cup of your daily fruit allowance

  • 2 medium apples
    • apples with deep rich flavor will work best
    • Barbara used Empire apples
  • 1 can Zevia black cherry soda
    • any zero-calorie sweet fruit soda such as strawberry or raspberry will also work
  • cinnamon, nutmeg or other spices (optional)
  • preheat oven to 350˚
  • wash apples
  • cut apples in half
  • cut out apple cores
  • place apple halves in baking dish face down
  • pour soda into baking dish until apples are covered halfway
  • bake for 1 hour or until apples are soft
  • remove from oven and allow to cool
  • added spices, if desired
  • enjoy!
