Samantha's Cucumber Avocado Rolls |  Vegetable Day

Makes 2 servings - uses 7 oz of your daily vegetable allowance

Ingredients
  • 1 cucumber
    • note, it is easier to work with a straight, rather than curved, cucumber
  • 1 avocado
  • small bunch of basil leaves
  • 1 clove garlic
  • 2 tsp lime juice
  • ΒΌ tsp salt
  • fresh ground pepper, to taste
  • paprika for garnish
  • cayenne pepper (optional)

This recipe uses a homemade filling, but you can substitute for pre-made, vinegar-free guacamole! Our favorites are Sabra or Costco's Kirkland brand guacamole.
Directions
  • combine avocado, basil, garlic, lime juice, salt and pepper in a food processor or blender until smooth and creamy
    • if you are combining by hand, finely mince the basil leaves and garlic before combining with the other ingredients and mix with a fork until smooth and creamy
  • set mixture aside
  • cut off the ends of the cucumber
  • using a mandolin or vegetable peeler, cut cucumber lengthwise into thin strips
  • spread a thin layer of the avocado mixture on a cucumber slice
    • make sure to spread the avocado mixture to the ends of the cucumber so the ends of the rolls will stick together
  • roll the cucumber slice and place on a plate
  • repeat with all the cucumber slices
  • sprinkle with paprika and/or cayenne pepper
  • serve right away
  • enjoy!
