Caramelized Onions And Bell Peppers        |  Vegetable Day
    
	Makes 2 servings - uses 6 oz of your daily vegetable 
	
    
    Ingredients
	 
    
	       
                      - 1 yellow bell pepper
 
                      - 1 red bell pepper
 
                      - 1 small yellow onion
 
                      - PAM olive oil or other zero calorie cooking spray
 
                      - ¼ tsp salt
 
                      - ¼ tsp freshly ground black pepper
 
                      - ½ tsp lemon juice
 
                      - ½ tsp fresh thyme, finely chopped (or ¼ tsp dried  thyme)
 
                    
  
    Directions
        
                      - remove stems and seeds from peppers and cut into  ¼ inch strips 
 
                      - peel onion and slice into ¼ inch strips
 
                      - spray large skillet with PAM and heat on medium-high  heat
 
                      - add onions, peppers and half of the salt and  pepper
 
                      - cook, stirring every few minutes until onions are  caramelized and peppers are tender and slightly browned, approximately 15-20  minutes
 
                  
                      - add lemon juice and thyme
 
                      - turn heat to low and cook for a few more minutes
 
                      - add remaining salt and pepper, to taste
 
                      - serve hot or room temperature
