Jill's Rainbow Slaw	 |  Vegetable Day
    
	Makes 2 servings - uses 10 oz of your daily vegetable allowance 
	
    
    Ingredients
	 
    
	     
                      - 12 oz package of rainbow slaw
- 4 oz zucchini, sliced
- 1 small sweet onion, chopped
- 1 shallot, chopped
- 1 tsp Walden Farms orange marmalade
- 15 sprays Braggs Liquid Aminos
- salt
- crushed pepper
- PAM Olive Oil or other zero-calorie cooking spray 
 
    Directions
      
                      - spray pan with PAM
- on a medium flame, sauté onion and shallot until  translucent (caramelized)
- add zucchini to sauté and cook for another 5  minutes
- add rainbow slaw to sauté
- in a separate container, combine Braggs and  orange marmalade, mixing well
- add mixture to sauté
- add crushed pepper, salt and any other  seasonings, to taste
- cook for approximately 5 more minutes, stirring  regularly
