Mashed Plantains (Gilda) |  Vegetable Day

Ingredients
  • 1 green plantain (cut in 3 or 4 pieces, skin on)
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • salt and black pepper
Directions
  • boil plantain for about 45 minutes or until soft
  • while cooking sauté an onion in pan sprayed lightly with Pam
  • you can add water or veggie broth to keep the onions caramelizing
  • add the garlic and cook another minute or so
  • when plantains are done, remove from water, slit peel and remove
  • mash the plantains, add the sautéed onions, salt and pepper to taste
