Bess' Lettuce Wraps |  Vegetable Day

Makes 4 servings - uses 8 oz of your daily vegetable allowance

  • 8 large pieces of Iceberg or Romaine lettuce
  • 1 medium avocado, sliced
  • 1 cucumber, diced
  • 8 oz white button mushrooms, thinly sliced
  • 3 oz bean sprouts (in water)
  • 1 large carrot, shredded
  • 2 - 3 TBSP Braggs Liquid Aminos
  • 3 - 4 TBSP Walden Farms peanut spread
  • 1 - 2 packets zero-calorie sweetener
  • peanut sauce:
    • mix (to taste) Walden Farms peanut spread, Braggs Liquid Aminos and zero-calorie sweetener
    • heat in pan on low until it thickens
  • lay out lettuce leaves on a plate
  • place avocado and cucumber in center of each piece of lettuce
  • in a saucepan, sauté mushrooms in Braggs Liquid Aminos
  • add sautéed mushrooms to center of each piece of lettuce
  • top with bean sprouts and shredded carrots
  • drizzle with peanut sauce
  • roll lettuce leaves with vegetables inside to create wrap
  • enjoy!
