Grilled Pineapple |  Vegetable Day

Makes 5 servings - uses 1 cup of your daily fruit allowance

  • 1 medium pineapple
  • PAM or other zero-calorie cooking spray
  • ¼ tsp cayenne pepper
  • sea salt
  • heat grill
  • spray grill with PAM
  • prepare pineapple by removing top and skin
  • slice into rounds approximately ¾” thick and remove core
  • in a small bowl, spray some PAM and mix with cayenne pepper and salt
  • brush pineapple slices with mixture
  • place on grill
  • cover and cook 4 - 5 minutes until slightly charred
  • uncover and turn pineapple slices over
  • cover and cook another 4 - 5 minutes until charred and tender
  • remove from grill and enjoy!
