Falafel (Susan M) |  Vegetable Day

Ingredients
  • 2 yellow, boiled, cooled plantains
  • 4 oz. onions
  • 1 clove garlic
  • 1/2 t cumin
  • 1/2 t coriander
  • 1 1/2 t parsley
  • salt
  • pepper
Directions
  • place all the above ingredients in food processor
  • make 6-8 balls and press into patties
  • spray pan with PAM heat with 4 cloves of garlic
  • fry each side until golden brown and serve
