Portobello Burger |  Vegetable Day

Makes 4 servings - each serving uses 10 oz of your daily vegetable allowance

  • 4 Portobello mushrooms
  • 1 red pepper
  • 1 green pepper
  • 1 medium onion
  • 1 tsp BBQ sauce
  • salt
  • pepper
  • other seasonings, to personal taste
  • horizontally, slice Portobello mushrooms in half (they will be the burger bun)
  • slice peppers and onion
  • season vegetables
  • put peppers and onions on skewers
  • put Portobello halves and vegetable skewers on BBQ or grill
  • roast vegetables to taste and remove from cooking surface
  • brush ¼ tsp BBQ sauce on the “inner” side of one half of each Portobello
    • this is the maximum BBQ sauce you may use without cheating
  • remove peppers and onions from skewers
  • put peppers and onions on top of Portobello halves brushed with sauce
  • cover each “burger” with the other half of each Portobello
  • enjoy!
