Swanson Cauliflower Poppers |  Vegetable Day

Makes 4 servings - uses 4 oz of your daily vegetable allowance

Ingredients
  • 1 head cauliflower
  • ½ medium lemon, zested
  • 1 tsp Swanson Organic Certified Organic Curry Powder
  • ¼ tsp Swanson Organic 100% Certified Organic Garlic Powder
  • 1 TBSP Santa Cruz Organic Pure Lemon Juice
  • Swanson Ultra Himalayan Crystal Salt
  • PAM olive oil flavor or other zero-calorie cooking spray
Directions
  • preheat oven to 425⁰
    • alternative: turn grill or stovetop to medium heat
  • mix curry, garlic, lemon juice and a few “spritzes” of PAM olive oil in a large bowl
  • cut florets off cauliflower and add to bowl
  • sprinkle in the lemon zest and mix ingredients well so all the cauliflower is coated
  • place cauliflower on skewers or on cookie sheet
  • sprinkle with a few generous pinches of salt
  • place in oven to roast for 25 minutes or until cauliflower is soft and caramelized in spots (turn a couple of times during roasting)
    • alternative: place on grill or stovetop for 15-20 minutes following same instruction
  • serve on skewers or with toothpicks
  • enjoy!
