Beets With Orange And Mint |  Vegetable Day

  • 5 medium beets (about 1-1/2 pounds)
  • ⅛ - ¼ cup water
  • 1t. orange extract
  • 1 packet sweetener (the amount of sweetener depends on how sweet the beets are - so watch this)
  • 1/2t. salt
  • 1 teaspoon orange zest
  • 1 teaspoon fresh mint (optional)
  • put the beets with enough water to cover the bottom of the dish to a depth of ½ inch, in a covered casserole
  • bake at 375 degrees for 1 hour
  • check to see if they are soft by piercing with the tip of a sharp knife or cooking fork - if not, give them another 10 - 15 minutes
  • slip the skins off, and slice or dice the beets
  • toss with the orange extract mixture
  • then the orange zest and mint
  • cool and serve
