Acorn Squash With Applesauce |  Vegetable Day
    
	Makes 2 servings - uses 1 of your daily fruit and approximately 10 oz. of your daily vegetable allowance 
	
    
    Ingredients
	 
    
	     
                      - 1 acorn squash
- ¾ cup applesauce
- 1 tsp. lemon juice
- cinnamon
 
    Directions
     
                      - cut acorn squash in half, lengthwise
- remove seeds
- combine lemon juice and applesauce, mixing well
- spoon mixture into center of acorn squash halves
- sprinkle with cinnamon
- place acorn squash in baking dish with ½ inch  water in bottom of dish
- cover
- bake at 400⁰ for 30 minutes
- remove cover
- bake at 400⁰ for another 30 minutes
