Acorn Squash With Applesauce |  Vegetable Day

Makes 2 servings - uses 1 of your daily fruit and approximately 10 oz. of your daily vegetable allowance

  • 1 acorn squash
  • ¾ cup applesauce
  • 1 tsp. lemon juice
  • cinnamon
  • cut acorn squash in half, lengthwise
  • remove seeds
  • combine lemon juice and applesauce, mixing well
  • spoon mixture into center of acorn squash halves
  • sprinkle with cinnamon
  • place acorn squash in baking dish with ½ inch water in bottom of dish
  • cover
  • bake at 400⁰ for 30 minutes
  • remove cover
  • bake at 400⁰ for another 30 minutes
