Red Pepper Coulis |  Vegetable Day

Ingredients
  • ⅛ cup chopped red hot chili peppers or cherry pepper (less to taste)
  • ½ teaspoon minced garlic
  • 2 Tablespoons shallots, finely chopped
  • ¼ cup vegetable broth
  • ¼ teaspoon table salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
Directions
  • in a small saucepan, combine red pepper, chili pepper or cherry pepper, garlic, shallots and broth
  • bring to a boil over medium-high heat and cook until peppers are tender, about 2 to 4 minutes
  • process mixture in a blender until smooth
  • stir in salt, pepper and mint
  • pour into a small serving bowl and chill before serving
