Bess' Avocado Tart |  Vegetable Day

Makes 1 serving - uses 8 oz of your daily vegetable allowance

  • 1 avocado, diced
  • 1 tsp lemon juice
  • 1 zucchini
  • 1 yellow squash
  • 1 pinch salt
  • 1 pinch pepper
  • ¼ red onion, chopped
  • 1 pinch cilantro, diced finely
  • mix avocado, onion, lemon juice, cilantro
  • add salt and pepper, to taste
  • set mixture aside
  • shred zucchini and squash in large sections
  • line a cooking ring or round cookie cutter with sections of zucchini and squash
  • place avocado mixture in the center
  • lift ring
  • enjoy!
