Strawberry Rhubarb |  Vegetable Day

Strawberry rhubarb sauce is a favorite old-fashioned treat. Fresh rhubarb is not available year round so enjoy this delicious recipe while you can!

Count the strawberries and rhubarb towards your fruit allowance.

  • 8 oz rhubarb
  • 1 cup strawberries
  • 1 packet Truvia or other zero-calorie sweetener
  • 1 tsp vanilla extract
  • ½ cup homemade strawberry or raspberry sugar-free gelatin
  • Prepare gelatin as per product instructions.
  • Place prepared gelatin in the refrigerator to cool.
  • Cut off the tops of the strawberries, and set the rest of the strawberries aside for later.
  • Slice the rhubarb.
  • Place the tops of the strawberries, rhubarb, sweetener, and vanilla extract in a small saucepan.
  • Add enough water to cover the bottom of the saucepan.
  • Simmer over medium heat, stirring frequently, until contents are thick and jam-like, around 15 minutes.
  • If needed, drain the saucepan of excess fluid after 12 minutes.
  • Slice the strawberries you set aside.
  • Place the strawberries in the saucepan with 1/2 cup gelatin and heat for 2 minutes.
  • Let cool and enjoy!
