Banana Ice Cream |  Vegetable Day

Makes 3 servings - uses 1 cup of your daily fruit allowance

Ingredients
    NOTE: You will need to freeze the bananas in advance of making this recipe. See detailed directions below.

  • 3 over-ripe bananas
  • 1-4 oz. water
  • dash of salt
  • 1 package stevia. If using other zero-calorie sweetener, adjust to personal taste.
  • optional, frozen strawberries, mango, blueberries, etc.
Directions
  • peel and slice bananas
  • place in a freezer safe container or baggie and freeze overnight
  • place frozen banana slices in a food processor
  • add 1 oz water, salt, and sweetener
  • start processor on low until bananas break up and then move setting to high until it becomes the consistency of soft-serve ice cream
  • add additional water, as necessary, to get the right consistency.
  • you may add other frozen fruit to make a variety of flavors. Count extra fruit in your daily allowance.
