Banana Ice Cream  |  Vegetable Day
    
	Makes 3 servings - uses 1 cup of your daily fruit allowance
	
    
    Ingredients
	 
    
	     
                    NOTE: You will need to freeze the bananas in advance of making this recipe. See detailed directions below.
- 3 over-ripe bananas
- 1-4 oz. water
- dash of salt
- 1 package stevia. If using other zero-calorie sweetener, adjust to personal taste.
- optional, frozen strawberries, mango, blueberries, etc.
 
    Directions
     
                      - peel and slice bananas
- place in a freezer safe container or baggie and freeze overnight
- place frozen banana slices in a food processor
- add 1 oz water, salt, and sweetener
- start processor on low until bananas break up and then move setting to high until it becomes the consistency of soft-serve ice cream
- add additional water, as necessary, to get the right consistency.
- you may add other frozen fruit to make a variety of flavors. Count extra fruit in your daily allowance.
