Japanese Salad Dressing  |  Vegetable Day
    
	Makes 4 servings - uses 2 oz of your daily vegetable allowance
	
    
    Ingredients
	 
    
	     
                      - 1 cucumber 
 
                      - 1 very small clove of garlic
 
                      - 2 packets zero-calorie sweetener
 
                      - onion powder (to taste)
 
                      - lemon juice (to taste)
 
                      - xanthan gum
 
                    
  
    Directions
      
                      - peel cucumber
 
                      - cut into thick chunks
 
                      - put cucumber, garlic, sweetener, onion powder and  lemon juice in blender
 
                      - mix until smooth
 
                      - if thicker consistency desired, add a pinch of  xanthan gum and blend
