Veggie Pizza (Susan M)

INGREDIENTS:
1 yellow plantain, boiled for 45 minutes, then cooled
1/2 t onion powder
1/2 t garlic powder

1/2 t parsley
1/4 t kosher salt
2 oz chopped onions
1 1/2 oz diced red pepper
1 1/2 oz diced green pepper
1 1/2 oz diced zucchini
2 oz MUIR GLENN ORGANIC TOMATO SAUCE

CRUST:
1 green plantain
1/2 t onion powder
1/2 t garlic powder
1/2 t parsley
1/4 t kosher salt

Put plantain, garlic powder, onion powder, parsley and salt in food processor
Pulse until it's all mashed and all ingredients are combined
Preheat oven to 425 and spray pizza stone with Pam
Roll plantain mixture into a ball, then carefully [stone is hot] flatten in to pizza crust onto hot stone
Cook 20 minutes BUT WATCH CAREFULLY SO IT DOESN'T BURN
After 20 minutes flip crust and cook for 10 minutes

TOPPING:
White it's cooking in a fry pan sprayed with Pam, sauté onions, red peppers, green peppers and zucchini
Top crust with 2 oz MUIR GLENN ORGANIC TOMATO SAUCE
Then add veggies
Cook for 10 minutes and serve

8 1/2 oz towards Veggie Allowance
Plantain = 1 Fruit Allowance
