                                             4th of July Recipes                                                                                      

                                     

    July 4 American Flag                                                                                                                vegetable day     

    ingredients

    • 2 bananas
    • 7 large strawberries
    • 16 blueberries
    • 1 TBSP lemon juice
    • 1 cup water

     

    directions

    • mix lemon juice and water in a medium bowl and set aside
    • peel and slice bananas, 1/4” to 1/2” thick
    • place banana slices in bowl of lemon juice to prevent browning
    • wash strawberries and blueberries
    • cut off and discard tops of strawberries
    • cut strawberries in quarters
    • create skewers as follows:
      • 4 skewers – slide onto skewer 1 strawberry, 1 banana, 1 strawberry, 1 banana, 4 blueberries
      • 5 skewers – slide onto skewer 1 strawberry, 1 banana, 1 strawberry, 1 banana, 1 strawberry, 1 banana, 1 strawberry
    • place skewers on serving platter aligning fruit “stripes” to create flag
    • enjoy!

      Makes 3 servings – 3 skewers is 1 cup of your daily fruit allowance



    July 4 Fruit Sparklers                                                                                                                vegetable day     

    ingredients

    • 2 thin slices watermelon
    • 37 blueberries
    • 4 slices banana
    • 1 TBSP lemon juice
    • 1 cup water

     

    directions

    • mix lemon juice and water in a medium bowl and set aside
    • peel and slice banana, 1/4” to 1/2” thick
    • place banana slices in bowl of lemon juice to prevent browning
    • cut watermelon into star shapes using small cookie cutters
    • wash blueberries
    • create skewers as follows:
      • 1 skewer – slide onto skewer 1 blueberry, 1 banana, 1 blueberry, 1 banana, 1 blueberry, 1 banana, 1 blueberry, 1 banana, 1 blueberry, 1 watermelon star
      • 4 skewers – slide onto skewer 8 blueberries, 1 watermelon star
    • place skewers on serving platter or in a decorative cup
    • enjoy!

    • Makes 1 serving – 4 skewers is 1 cup of your daily fruit allowance

       

    July 4 Star Fruit Salad                                                                                                                vegetable day     

    ingredients

    • 2 thin slices watermelon
    • 1 white peach
    • 1 cup blueberries

     

    directions

    • slice peach top down into as many thin “circles” as you can
    • using small star shaped cookie cutter, slice peach and watermelon
    • combine with blueberries in a bowl
    • enjoy!

    • Makes 2 servings - uses 1 cup of your daily fruit allowance
