July 4 Fruit Sparklers |  Vegetable Day

These sparklers are easy to make and fun to eat!

Makes 1 serving - 4 skewers is 1 cup of your daily fruit allowance

Ingredients
  • 2 thin slices watermelon
  • 37 blueberries
  • 4 slices banana
  • 1 Tbsp lemon juice
  • 1 cup water
Directions
  • Mix lemon juice and water in a medium bowl and set aside.
  • Peel and slice banana, 1/4” to 1/2” thick
  • Place banana slices in bowl of lemon juice to prevent browning.
  • Cut watermelon into star shapes using small cookie cutters.
  • Wash blueberries.
  • Create skewers as follows:
    • 1 skewer - slide onto skewer 1 blueberry, 1 banana, 1 blueberry, 1 banana, 1 blueberry, 1 banana, 1 blueberry, 1 banana, 1 blueberry, 1 watermelon star
    • 4 skewers - slide onto skewer 8 blueberries, 1 watermelon star
  • Place skewers on serving platter or in a decorative cup.
