Garlic and Leek Soup |  Vegetable/Fruit Day

Findings suggest that high consumption of certain Allium vegetables, in particular garlic and leek, may reduce the risk of breast cancer. With the onset of autumn, what a great time to keep healthy and warm with this Garlic and Leek Soup.

Ingredients
  • 1 Tbsp olive oil
  • 6 garlic gloves, diced
  • 1 onion, chopped
  • 1 whole leek, discard root end, and slice the rest
  • 1 zucchini, roughly chopped
  • 1 tsp thyme, dried or fresh
  • 4 cups vegetable stock
  • Salt and pepper, to taste.
Directions
  • Heat oil in a saucepan on medium heat.
  • Add onion, and garlic.
  • Stir gently till onions are soft and translucent.
  • Add thyme.
  • Add chopped leeks and zucchini. Continue sauteing.
  • Once the vegetables look slightly caramelized, add vegetable stock.
  • Using a stick blender, blend till smooth.
  • Add salt and pepper to taste.
  • Serve hot with a garnish of choice, such as chives, parsley, etc.
  • Enjoy!
