Desiree's Roasted Garlic Curry Cauliflower |  Vegetable/Fruit Day

Makes 2 servings - each serving uses 8 oz of your daily vegetable allowance

Ingredients
  • 1 head cauliflower
  • 3 cloves garlic, crushed
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1/4 tsp red pepper
  • zero-calorie grapeseed oil cooking spray or other zero-calorie cooking spray
Directions
  • preheat oven to 400˚
  • cut and clean cauliflower florets
  • place in a large bowl
  • lightly spray with cooking spray
  • in a separate bowl, combine all “powder” spices
  • sprinkle half of the spices over the cauliflower
  • toss to coat cauliflower
  • toss in crushed garlic
  • sprinkle remaining spices and toss again until all ingredients are fully incorporated
  • place cauliflower on a sheet pan with parchment paper, spreading out florets so they are not crowding each other
  • bake for 30 minutes
  • enjoy!
