Eliana's Anytime Decaf Coffee Granita |  Any Day, Any Time

makes 2 servings - each serving uses none of your daily allowance

Ingredients
  • 2 cups fresh STRONG brewed decaf coffee
  • zero-calorie sweetener, to taste
    • you may add flavor by sweetening with zero-calorie sugar-free syrups such as DaVinci Gourmet hazelnut, French vanilla, caramel, etc.
  • 2-3 sugar-free peppermint starlight or other sugar-free candy
    • make sure each piece of candy has 10 calories or less
Directions
  • pour hot coffee into a 9x13 inch cake pan
    • note, coffee should not be higher than an inch up the side of the pan
  • add sweetener or sugar-free syrup, to taste
  • chill in the fridge for 20-30 minutes
  • move to the freezer for one hour
  • gently rake a fork across the surface of the frozen coffee, breaking up any ice crystals in the middle and around the edges
  • freeze another 45 minutes
  • again, gently rake a fork across the surface of the frozen coffee, breaking up any ice crystals in the middle and around the edges
  • repeat freezing and raking process until all of the coffee is frozen into flaky crystals
  • fluff with a fork
  • allow flakes to "dry" in the freezer for another 30 minutes before serving
    • note, it should look like a fluffy pile of dry brown crystals
  • when ready to serve, spoon granita into decorative dessert bowls
  • crush the peppermint (or other) candy and sprinkle on top
  • enjoy!
