Israeli Salad |  Vegetable/Fruit Day

makes 2 servings - each serving uses 6 oz of your daily vegetable allowance

  • 3 mini cucumbers
  • 1 large tomato
  • 1/4 red onion
  • parsley, to taste
  • 1 TBSP lemon juice
  • salt, to taste
  • pepper, to taste
  • dice the cucumbers
    • optional to peel them first
  • remove the seeds from the tomato
  • dice the tomato
  • finely chop the onion
  • finely chop the parsley
  • combine vegetables in a bowl
  • add lemon juice, salt and pepper
  • combine well
  • enjoy!
