Mock Home Fries |  Vegetable/Fruit Day

A tasty mixture of diced plantain, peppers, onions and seasonings, these Mock Home Fries are great for lunch or dinner!

Makes 1 serving - uses 1 cup of your daily fruit allowance and 2 oz of your daily vegetable allowance.

Ingredients
  • 1 yellow plantain, diced
  • 1/4 cup onion, diced
  • 1/4 cup green pepper, diced
  • Salt and pepper
  • PAM butter, PAM olive oil or other zero-calorie cooking spray
  • 2-3 Tbsp water
Directions
  • Combine diced ingredients in a bowl.
  • Season with salt and pepper, to taste.
  • Spray with PAM.
  • Place in sauté pan with water.
  • Cover and cook for 10-12 minutes, stirring frequently, until plantain softens.
  • Continue to cook until they “crisp up” a little.
  • Enjoy!
