Rakesh's Spicy Mango & Avocado Salad |  Vegetable/Fruit Day

Makes 1 serving - uses 8 oz of your daily vegetable allowance and 1 cup of your daily fruit allowance

  • 1 avocado, chopped
  • 1 clove garlic, sliced thin
  • 1 birds eye red chili, sliced thin
  • 1 spring onion, sliced
  • 1 mango
  • 1/2 lime
  • small bunch cilantro, chopped
  • a pinch of cumin
  • slice mango against the flat side, score the flesh with a criss-cross pattern, turn inside out into a “hedgehog” and cut off cubes
  • combine mango, avocado, garlic, chili and spring onion
  • sprinkle a pinch of cumin on top
  • squeeze lime over salad
  • add cilantro
  • toss well
  • chill and enjoy!
