Rakesh's Spicy Mango & Avocado Salad |  Vegetable/Fruit Day
    
	Makes 1 serving - uses 8 oz of your daily vegetable allowance and 1 cup of your daily fruit allowance
	  
	
    
    Ingredients
	     
							- 1 avocado, chopped 
 
                            - 1 clove garlic, sliced thin
 
                            - 1 birds eye red chili, sliced thin
 
                            - 1 spring onion, sliced
 
                            - 1 mango
 
                            - 1/2 lime
 
                            - small bunch cilantro, chopped
 
                            - a pinch of cumin
 
						
  
    Directions
     
							- slice mango against the flat side, score the  flesh with a criss-cross pattern, turn inside out into a “hedgehog” and cut off  cubes
 
                            - combine mango, avocado, garlic, chili and spring onion
 
                            - sprinkle a pinch of cumin on top
 
                            - squeeze lime over salad
 
                            - add cilantro
 
						
                          - toss well
