Roasted Vegetables |  Vegetable/Fruit Day

Roasted vegetables are a great way to warm up a cold day. Delicious and nutritious too!

Ingredients
  • Seasonings to personal taste
  • Garlic cloves
  • 2 Tbsp olive oil
  • Zero-calorie cooking spray

  • For Optimal Detox:
  • Asparagus
  • Beets
  • Broccoli
  • Cauliflower
  • Onions

  • Additional Options:
  • Bell peppers
  • Brussels sprouts
  • Cabbage
  • Carrots
  • Mushrooms
Directions
  • Preheat oven to 425°.
  • Spray roasting pan with zero-calorie spray.
  • Slice vegetables into bite-sized pieces and measure out 16 oz.
  • Spread vegetables into single layer on pan.
  • Top with garlic cloves, drizzle with olive oil and season to personal taste.
  • Place pan in oven and roast for 15 mins, then stir vegetables.
  • Continue roasting in 15 min increments and stirring the vegetables until the edges turn golden brown.
  • Remove garlic cloves and squeeze over the other vegetables, mixing well.
  • If desired, add seasoning.
  • Enjoy!
