Roasted Vegetables |  Vegetable/Fruit Day
    
	Roasted vegetables are a great way to warm up a cold day. Delicious and nutritious too! 
	  
	
    
    Ingredients
	     
- Seasonings to personal taste
 - 
Garlic cloves 
 - 
2 Tbsp olive oil 
 - 
Zero-calorie cooking spray 
 
For Optimal Detox: 
- Asparagus 
 - 
Beets 
 - 
Broccoli 
 - 
Cauliflower 
 - 
Onions 
 
Additional Options: - 
Bell peppers 
 - 
Brussels sprouts 
 - 
Cabbage 
 - 
Carrots 
 - 
Mushrooms 
 
  
    Directions
     
- Preheat oven to 425°. 
 - 
Spray roasting pan with zero-calorie spray. 
 - 
Slice vegetables into bite-sized pieces and measure out 16 oz. 
 - 
Spread vegetables into single layer on pan. 
 - 
Top with garlic cloves, drizzle with olive oil and season to personal taste. 
 - 
Place pan in oven and roast for 15 mins, then stir vegetables. 
 - 
Continue roasting in 15 min increments and stirring the vegetables until the edges turn golden brown. 
 - 
Remove garlic cloves and squeeze over the other vegetables, mixing well. 
 - If desired, add seasoning.
