Jicama “fries” |  Vegetable/Fruit Day

These Healthy Jicama Fries make a fantastic alternative to traditional French fries. They are easy to prepare and they satisfy the need for a salty snack.

Makes 4 servings – uses 4 oz of your daily vegetable allowance

Ingredients
  • 1 large jicama
  • 2 tsp garlic powder
  • 2 tsp chili powder
  • 2 tsp paprika powder
  • Salt & pepper, to taste
  • Avocado oil spray or any other zero calorie cooking spray
Directions
  • Cut Jicama into strips you may use a mandolin to make thin slices and then cut thin strips with a knife.
  • Place jicama strips in a bowl of water and microwaved for 6 min.
  • Drain and toss in a bowl with salt, pepper, garlic powder, chili powder and paprika.
  • Spray avocado oil on parchment lined cookie sheet.
  • Spread the “fries” on the trays, trying not to crowd them.
  • Baked at 425˚ for 30 min in a convection oven, bake 15 minutes longer in a regular oven or until they are browning.
