Vegetable Soup |  Vegetable/Fruit Day

  • 32 oz vegetable stock
  • approx 3 lbs assorted vegetables & seasonings as desired

Ingredients in soup pictured:

  • bok choy
  • onion
  • celery
  • butternut squash
  • red pepper
  • carrots
  • green beans
  • Himalayan salt
  • black pepper
  • Bragg’s Organic Sprinkle
  • pour stock in large pot
  • chop vegetables and add them to pot
  • season to taste
  • cover and simmer on a low flame until vegetables are soft (2-3 hrs) stirring every 30 mins
