Roasted Cauliflower |  Vegetable/Fruit Day

Ingredients
  • 1 cauliflower
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 lemon, juiced
  • chopped parsley to garnish
Directions
  • Preheat oven to 375
  • Carefully cut and remove the core
  • Grease your baking dish with half a tablespoon of olive oil
  • Add the cauliflower and drizzle with remaining olive oil
  • Sprinkle with paprika, sea salt and pepper
  • Rub in the seasoning with your hands
  • Roast for 50-60 minutes, or until it’s browned and a skewer pokes into it easily
  • Cut into wedges and serve with lemon juice and parsley
