Apple pumpkin soup with tumeric            |  Vegetable/Fruit Day
    
	Makes 4 servings - each serving uses 8 oz of your daily vegetable allowance and ½  cup of your daily fruit allowance
	  
	
    
    Ingredients
	     
					    - 2 cups red onions, diced
 
                        - 4 garlic cloves, minced
 
                        - 1 cup of carrots, diced
 
                        - 2 cups of apples, peeled, cored and  diced
 
                        - 2 cups of fresh diced pumpkin 
 
                        - 3 cups water
 
                        - 1 TBSP ground turmeric
 
                        - salt and pepper to taste
 
                        - 2 tsp fresh  coconut shavings
 
                        - fresh basil, chopped, for garnishing
 
                        - coconut zero calorie cooking spray 
 
				      
  
    Directions
     
					    - spray coconut zero  calorie cooking spray in a large skillet over medium heat 
 
                        - sauté the onions and garlic for 3 minutes  until the onions are translucent and the garlic is fragrant 
 
                        - add the chopped carrots, pumkin and apples  and sauté for 5 minutes 
 
                        - add water and turmeric 
 
                        - bring the soup to a boil, then turn the  heat down to low, simmer for 30 minutes until the apples and carrots are soft 
 
                        - remove from heat and let it cool before  processing in a blender 
 
                        - add salt and pepper to taste 
 
                        - divide the soup between 4 bowls and  sprinkle with coconut shavings and fresh chopped basil 
 
                        - you can freeze the soup for future use.
