Kathy's Mango Guacamole Salad |  Vegetable/Fruit Day

Makes 1 serving - uses 14 oz of your daily vegetable allowance and 1/2 cup of your daily fruit allowance

  • 1 avocado
  • 1/2 mango
  • 1/2 tomato
  • cilantro, to taste
  • salt, to taste
  • lime juice, to taste
  • 6 oz salad greens
  • chop avocado, mango, tomato, cilantro
  • combine chopped ingredients
  • add salt and lime juice
  • serve over salad greens
  • enjoy!
